Alex, Pranav, Nithin, and Asif — four young minds from different corners of Kerala — found themselves in Kozhikode, chasing dreams of building careers in stock trading. After completing a course together, they moved into a rented house in Thiruvannur, with nothing but ambition and each other. But destiny had other plans.
Enter Vipin — a Michelin-star restaurant’s head chef from London, who left his prestigious role to pursue passion over profession. Drawn by the spark in these young men, he joined their journey, bringing with him years of culinary mastery. When financial roadblocks hit, it was Vipin who suggested something completely offbeat: smoked beef brisket, a delicacy unfamiliar to Kerala’s traditional cuisine, but rich with potential.

Armed with little more than steel sheets, an old paint drum, and YouTube tutorials, the team built their first homemade smoker in an abandoned room of their rental home — fondly named their “smoke lab.” Their first experiments were riddled with failures. The brisket was too tough, the flavors inconsistent. But night after night, failure after failure, they kept refining. Hope was their only fuel.
Chicken worked better, but their hearts were set on brisket. Eventually, they upgraded to a professional smoker and dove deeper into technique. On the 26th attempt, they finally got it right.
